Over two days you'll learn the why and how of optimizing your health.
Dr. Anthony Lim is a board-certified family physician. He is a graduate of Stanford University, Harvard Law School, and Boston University School of Medicine, and he completed his residency training at Santa Rosa Family Medicine Residency, a UCSF affiliate.
Currently, he divides his time between his various roles as the Medical Director of the 10-day, live-in McDougall Program, as a Staff Physician at True North Health Center, and as the Physician Lead for Kaiser Permanente's monthly plant-based nutrition class located in Santa Rosa.
He has a special interest in the role of diet and lifestyle medicine in preventing, treating, and reversing chronic illnesses such as obesity, diabetes, cancer, autoimmune conditions, and heart disease.
Dr. Lim lives in Santa Rosa, California with his amazing wife, Jean, their two wonderful children, Joshua (10) and Julia (5), who bring them endless joy and laughter, and their dog, Balto.
John McDougall’s national recognition as a nutrition expert earned him a position in the Great Nutrition Debate 2000 presented by the USDA. He is a board certified internist, author of 13 national best-selling books, host of the nationally syndicated television show “McDougall, MD” and Founder of the McDougall Program in Santa Rosa, California. Over the past 25 years he has been caring for people with diet and lifestyle medicine.
Founded Pachavega Living Foods Education to inspire people to take charge of their happiness and health by eating mindfully. She offers whole foods, plant-based catering, nutritional consultation and runs a vegan culinary school that teaches raw food chef certification including the most amazing 45 hour Healing Whole Foods Preparation Certificate and the 70 hour *Heal and Ignite* Raw Chef Certificate. Dr. Jonathan Chan co-founded and medical director for the five Imagine Health Centres, a patient-centred, collaborative approach to primary health care that focuses on preventing rather than just treating disease. The group employs 50 physicians and more than 100 other staff members.
Chan, a father of three, also serves as director and treasurer of the South Anderson Primary Care Association under the SCPCN, and is a clinical lecturer at the University of Alberta and University of Calgary. “It sounds dramatic, but I really do think we’re saving lives on a daily basis,” he says.
A practicing community pharmacist who is the mother of four school age children who all live a whole lifestyle. Anna puts food first in her practice so that her patients are empowered to take responsibility for their health and wellness. She helps patients to use medicine judiciously combined with healthy food choices to optimize outcomes.
Johnathan is a graduate student at the University of Calgary, completing his masters degree in clinical social work. He has been an educator and facilitator on a variety of topics related to diversity, social justice, trauma-informed, and mindfulness-based practice for nearly 10 years. Currently, he runs his own mindfulness based practice in downtown Calgary.
Andrew owns and operates a scientific consultancy specializing in health, safety and environmental risk assessment which provides services to large environmental companies and government agencies across Canada.
He has previously taught environmental science at Carleton University, Ottawa and received postdoctoral training in chemistry and physics at the Universities of Waterloo and Maryland after obtaining his PhD from the University of Manchester, UK.
Andrew has been following a whole food plant-based diet since 2012 and has seen significant improvements in his own health.
He has attended Dr Esselstyn’s Prevent and Reverse Heart Disease seminar at the Cleveland Wellness Center and is a Starch Solution Graduate from the McDougall Medical and Health Center.
Kate has practiced as a pharmacy technician, registered nurse, family mediator and for the past 25 years as a clinical therapist helping individuals, couples and families. She holds the following certificates: Food for Life Instructor with Physcian’s Committee (pcrm.org), Plant-based Nutrition and Nutrition of a Healthy Heart (T. Colin Campbell and Cornell University), Starch Solution Graduate (McDouagall Medical and Health Centre) and Rouxbe Plant –based Cooking in partnership with the Plantrician Project.
She has also completed Dr. Esselstyn’s Prevent and Reverse Heart Disease Seminar at the Cleveland Clinic and Prevent and Reverse Heart Disease for Women in Cleveland. Her own health story is incredible and is featured in Forks over Knives Success Stories and the Jan/Feb /18 issue of VegNews.
Christina Kiyomi Mielke is a passionate foodie, with a professional engineering background and restauranteur roots. The sudden onset of numerous health challenges in her family led her to explore the link between food and health. Her discovery of the compelling scientific evidence in support of a plant based diet combined with the exciting challenge of making great tasting food without the use of "the good stuff", the cheeses, meats and fats, injected even more passion into her cooking.
After seeing first hand the benefits of following a plant based diet over the last number of years, the recovered cheese-a-holic is eager to share her timesaving tips to good healthy eats that will satisfy even the busiest individual or high speed family like her own.
Carol is a whole food, plant-based educator and a professionally trained chef. She is passionate about helping people shift to a plant-based diet to heal or improve their overall health.
She holds a certificate in Plant-based Nutrition from the T. Colin Campbell Centre for Nutritional Studies at Cornell University and an Instructors’ Food Over Medicine Certificate (one of only a handful in Canada) from the Wellness Forum Institute in Columbus, Ohio.
Carol also has extensive experience with the raw food diet and water-only fasting. Carol believes in partnering with her clients on their journey towards vibrant health.
Jeannine Elder is a graphic designer, illustrator, health advocate and YouTuber on a mission to empower people in their health and lead them to a healthy whole foods plant based way of eating.
Jeannine has been a junk foodie her entire life which ultimately lead to health complications in her early 30s – eczema, gallstones and severe hypothyroidism due to Hashimoto's disease. She switched to a plant based diet with her husband in May of 2011 after watching the documentary Forks Over Knives. Switching to plant based wasn’t an instant success story for her because she was always managed to find plant based junk food. It wasn't until she focused more on whole foods that she felt a significant increase in energy and overall well being.
In an effort to simplify and prove once and for all that a carbohydrate-rich diet does not cause weight gain or prevent weight loss, in February 2017, she ate only potatoes for an entire month and as a result, lost 8 pounds, diminished junk food cravings and reset her taste buds.
Since then she has lost 35 pounds eating a potato-based diet and inspired many others to do the same. She has helped women with autoimmune conditions realize that they too can reach their healthy weight with the power of the potato.
Jeannine lives in Cambridge, Ontario, Canada with her husband Scott, hosted by her wonderful parents Jim and Debbie. The house is even cozier with their collective herd of animals: Squeaky, Rumor, Molly, Penny, June Bug and Lyla.
